Potato salad seasoned with mild garlic aioli is an incomparable side dish for the barbecue or buffet.

- 1 dl aioli ready made
- 8 potatoes small
- 1 sweet onion
- 1 bunch parsley
- 1 tsp salt
- 1 tsp black pepper
- Bring the potatoes with their skins on to the boil.
- Peel and chop the onion as small as possible. Chop the parsley as well.
- When the potatoes are almost cooked, pour off the water and leave to cool. They are still cooking, so don’t boil them to mush. Peel the potatoes once they have cooled.
- Mix the ingredients into a potato salad and season with salt and pepper. Aioli potato salad will only get better in the fridge for a couple of days.
