Chorizo pasta offers a delicious combination of savoury and sweet flavours. You can tailor the pasta to your preferences by choosing from a variety of chorizo sausages. Whether you choose the mild, smoky notes of Spanish chorizo, the fiery kick of Mexican chorizo or the earthy flavour of Portuguese chorizo, this easy recipe will sweep you off your feet.
Ingredients
- 350 grams of pasta
- 300 grams chorizo sausage diced
- 1 small onion finely chopped
- 2 dl chicken or vegetable broth
- 200 g frozen peas
- 2 cloves garlic minced
- 1 tsp dried oregano
- 1 tsp of salt
- 0,5 tsp black pepper to taste
- 50 grams grated Parmesan cheese
- fresh oregano for garnish
- Olive oil for cooking
Instructions
Cook the Pasta:
- Bring a large pot of salted water to a boil.
- Add the pasta and cook according to the package instructions until al dente.
- Drain the pasta and set it aside.
In the meantime cook the Chorizo:
- In a large skillet, heat a drizzle of olive oil over medium-high heat.
- Add the chorizo sausage and cook until it’s browned and slightly crispy, about 4-5 minutes. Remove chorizo from the pan and set it aside.
Sauté Onions and Garlic:
- In the same pan, add the chopped onion and sauté for about 2-3 minutes until it becomes translucent.
- Add the minced garlic and dried oregano, and cook for another 1-2 minutes until fragrant.
Add Peas and Broth:
- Pour in the chicken or vegetable broth. Stir to combine.
- Stir in the pan the frozen peas. Let the mixture simmer for about 5 minutes, allowing the sauce to thicken.
Combine Pasta and Chorizo:
- Return the cooked chorizo to the pan and mix it with the sauce.
Season and Finish:
- Season the sauce with salt and black pepper to taste.
- Place Chorizo Pasta dishes on plates.
- Sprinkle grated Parmesan cheese over the top.
- Garnish with chopped fresh oregano.
