Ingredients

  • 350 grams of pasta
  • 300 grams chorizo sausage diced
  • 1 small onion finely chopped
  • 2 dl chicken or vegetable broth
  • 200 g frozen peas
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • 1 tsp of salt
  • 0,5 tsp black pepper to taste
  • 50 grams grated Parmesan cheese
  • fresh oregano for garnish
  • Olive oil for cooking

Instructions

Cook the Pasta:

  • Bring a large pot of salted water to a boil.
  • Add the pasta and cook according to the package instructions until al dente.
  • Drain the pasta and set it aside.

In the meantime cook the Chorizo:

  • In a large skillet, heat a drizzle of olive oil over medium-high heat.
  • Add the chorizo sausage and cook until it’s browned and slightly crispy, about 4-5 minutes. Remove chorizo from the pan and set it aside.

Sauté Onions and Garlic:

  • In the same pan, add the chopped onion and sauté for about 2-3 minutes until it becomes translucent.
  • Add the minced garlic and dried oregano, and cook for another 1-2 minutes until fragrant.

Add Peas and Broth:

  • Pour in the chicken or vegetable broth. Stir to combine.
  • Stir in the pan the frozen peas. Let the mixture simmer for about 5 minutes, allowing the sauce to thicken.

Combine Pasta and Chorizo:

  • Return the cooked chorizo to the pan and mix it with the sauce.

Season and Finish:

  • Season the sauce with salt and black pepper to taste.
  • Place Chorizo Pasta dishes on plates.
  • Sprinkle grated Parmesan cheese over the top.
  • Garnish with chopped fresh oregano.
