In Alsace, France, the flame pie “Flammkuchen” replaces the pizza. This is an excellent evening snack or lunch dish. You can experiment with the toppings to your liking.
Ingredients
Pie crust
- 1 dl warm water
- 1 dl cream
- 4 dl wheat flour more if needed
- 1 teaspoon dry yeast
- 3 tbsp olive oil
- 1 teaspoon salt
- ½ tsp sugar
Fillings
- 120 g bacon
- 2 onions
- 200 g sour cream
- 1 egg
- 0.5 tsp ground nutmeg
- 1 teaspoon salt
- ½ teaspoon black pepper
- thyme mints
Instructions
- Knead the base ingredients into a dough. Leave to rise under a cloth for half an hour.
- Cut the bacon into smaller pieces. Peel and slice the onion very thinly. Separate the rings.
- Mix the sour cream, egg and nutmeg.
- Roll out the dough on a baking paper. It should be as thin as you can get.
- Spread the sour creme on the bottom, then the onion rings evenly and the bacon on top. Salt and pepper the top.
- Bake the Flammkuchen in the oven at 250C for about 10 minutes. Keep on eye and make sure it doesn't burn.
- Shread thyme over the top of the Flammkuchen and serve immediately.
