Green pepper sauce is a great accompaniment for minced meat dishes. Dijon mustard and sage give the sauce a subtle note.
Ingredients
- 1 onion
- 1 tbsp butter
- 2 dl vegetable stock e.g. fondue
- 2 dl whipping cream
- 1 tbsp dijon mustard
- 20 green peppers
- 1 tsp dried sage
- 1 teaspoon salt
- 1 teaspoon corn starch
Instructions
- Peel and chop the onion. Sauté with butter, sage and five peppers in a saucepan. Do not brown.
- Add the vegetable stock and cook for 10 minutes.
- Strain the sauce into sauce pot. Add the cream to the pot and bring to the boil.
- Add the remaining green peppers and mustard to the sauce. Bring to the boil again and taste.
- Thicken with cornstarch if needed. The Green Pepper Sauce should have a lot of texture. Serve immediately.
