- 1 onion
- 1 tbsp butter
- 2 dl vegetable stock e.g. fondue
- 2 dl whipping cream
- 1 tbsp dijon mustard
- 20 green peppers
- 1 tsp dried sage
- 1 teaspoon salt
- 1 teaspoon corn starch
Peel and chop the onion. Sauté with butter, sage and five peppers in a saucepan. Do not brown.
Add the vegetable stock and cook for 10 minutes.
Strain the sauce into sauce pot. Add the cream to the pot and bring to the boil.
Add the remaining green peppers and mustard to the sauce. Bring to the boil again and taste.
Thicken with cornstarch if needed. The Green Pepper Sauce should have a lot of texture. Serve immediately.
