Tapenade is an olive paste that, when spread over a baguette, takes you straight to the warm Mediterranean mood.

Ingredients
Black Tapenade
- 2 dl kalamata olives pitted
- 1 tablespoon capers or a couple of anchovy fillets
- 1 tablespoon lemon juice
- 1 dl virgin olive oil
- 1 teaspoon black pepper
Mint Tapenade
- 2 dl green olives pitted
- 1 dl fresh mint leaves
- 1 clove garlic
- 1 dl virgin olive oil
- ½ teaspoon chili
Instructions
- There is nothing difficult about making Tapenade. Beat all the ingredients, except the olive oil, in a chopper. Another option is to use a mortar and pestle.
- With a couple of whirls, break up the texture and start adding the olive oil slowly. Keep swirling in between. Grind until the Tapenade is a spreadable paste.
- Place the Tapenade in a cup to serve and garnish with capers or mint leaves.
