Ingredients
  

Black Tapenade

  • 2 dl kalamata olives pitted
  • 1 tablespoon capers or a couple of anchovy fillets
  • 1 tablespoon lemon juice
  • 1 dl virgin olive oil
  • 1 teaspoon black pepper

Mint Tapenade

  • 2 dl green olives pitted
  • 1 dl fresh mint leaves
  • 1 clove garlic
  • 1 dl virgin olive oil
  • ½ teaspoon chili

Instructions
 

  • There is nothing difficult about making Tapenade. Beat all the ingredients, except the olive oil, in a chopper. Another option is to use a mortar and pestle.
  • With a couple of whirls, break up the texture and start adding the olive oil slowly. Keep swirling in between. Grind until the Tapenade is a spreadable paste.
  • Place the Tapenade in a cup to serve and garnish with capers or mint leaves.
