There are usually always ingredients in the fridge for a Sausage & Potato Hash. This recipe comes with a sweet mustard sauce. You can use the sauce but it is not necessary.
Ingredients
- 400 g sausage light scandinavian style sausage is good for it
- 8 firm tomatoes
- 1 large yellow onion
- 4 eggs
- 2 tbsp rapeseed oil
- 2 pickled cucumbers
Sweet mustard sauce
- 2 tbsp white wine vinegar
- 1 tbsp olive oil
- 3 tablespoons mustard
- 1 tablespoon sugar
Instructions
- Peel and dice the onion and potato very finely.
- Take a large pan on the stove and heat the oil. Put the onion slices in the pan first, sauté slowly. Then add the potatoes. Swirl over a low heat for 15 minutes until the potato cooks and starts to get some colour on the surface.
- Take another, non-stick pan and fry the eggs in it. The yolks should remain loose.
- Dice the sausages over the potatoes. Fry the sausages to colour them as well.
- Pile the Sausage & Potato Hash on plates and top with the fried egg.
Mustard sauce:
- Blend sauce ingredients until smooth and season with sugar. Mix the ingredients until smooth and season with salt and sugar. Serve with the Sausage & Potato Hash. Dill is also a good seasoning for mustard.
