8firm tomatoes
1large yellow onion
4eggs
2tbsprapeseed oil
2pickled cucumbers
Sweet mustard sauce
2tbspwhite wine vinegar
1tbspolive oil
3tablespoonsmustard
1tablespoonsugar
Instructions
Peel and dice the onion and potato very finely.
Take a large pan on the stove and heat the oil. Put the onion slices in the pan first, sauté slowly. Then add the potatoes. Swirl over a low heat for 15 minutes until the potato cooks and starts to get some colour on the surface.
Take another, non-stick pan and fry the eggs in it. The yolks should remain loose.
Dice the sausages over the potatoes. Fry the sausages to colour them as well.
Pile the Sausage & Potato Hash on plates and top with the fried egg.
Mustard sauce:
Blend sauce ingredients until smooth and season with sugar. Mix the ingredients until smooth and season with salt and sugar. Serve with the Sausage & Potato Hash. Dill is also a good seasoning for mustard.
