Roasted Chicken Drumsticks

Roasted Chicken Drumsticks

Roasted chicken drumsticks are one of the easiest and most reliable comfort foods you can make at home. This affordable cut benefits from generous oven time and simple seasoning, turning into a deeply flavourful main dish with juicy meat and beautifully crisp skin. Whether you are cooking for a busy weekday dinner or a relaxed weekend gathering, roasted drumsticks are always a safe and satisfying choice.

In this roasted chicken drumsticks recipe, the legs are coated in a simple mixture of olive oil, lemon juice and warm spices such as curry powder and paprika. As they roast in the oven, the surface develops a rich colour while the meat slowly becomes tender and succulent. A small pinch of brown sugar can be added to enhance caramelisation and create a subtle roasted sweetness.

Roasted chicken drumsticks are extremely versatile as a main course. They pair well with potato salad, rice or roasted vegetables, but can also be served as part of a buffet or shared meal. The recipe is easy to scale up for larger groups, and leftovers keep well in the refrigerator for the next day.

For the best texture, finish the drumsticks briefly under the grill element or at maximum oven heat. This final step helps the skin become golden and crispy, giving the dish an appealing roasted aroma and restaurant-style finish.

Instructions

  • Preheat the oven to full heat.
  • Squeeze the lime juice into a bowl. Add the olive oil and spices and mix well.
  • Toss the chicken drumsticks in the spicy oil thoroughly. Place in a suitable sized shallow baking dish. If the pan is too large, the spices will run off the edges and dry out.
  • Place foil over the dish and take it in the oven. Lower the oven temperature to 200C. Roast the chicken legs for 45 minutes. Turn the chickens couple of time to ensure that the spice oil is evenly distributed over the meat.
  • Remove the foil, flip the skin side on top and heat the oven to full heat (use grill racks if you have them in the oven). Toast the chicken skin until crispy and beautifully coloured. This will take 10-15 minutes, but watch the food all the time so it doesn't burn.
  • Let the chicken drumsticks to cool for a while and garnish with parsley.

Notes

  • Do not overcrowd the baking dish — air circulation helps crisp the skin.
  • Turn the drumsticks once during roasting for even colour.
  • A small amount of brown sugar improves caramelisation.
  • You can roast potatoes or root vegetables in the same dish.
