Crispy sweet potato fries can be made in a home oven. It takes a bit of work and a bit of fiddling, but it’s certainly rewarding. Especially with blue cheese dip. Soaking the starch and adding it back in sounds strange, but it works wonders for the sweet potato.
Ingredients
- 1 kg sweet potatoes
- 2 tablespoons olive oil
Spicy Seasoning
- 1 teaspoon paprika powder
- 2 teaspoons onion powder
- 1 teaspoon sugar
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 tablespoon corn starch
Steam dip
- 150 g sour cream
- 100 g blue cheese
Instructions
- Peel and cut the sweet potatoes into French fries. 1 cm x 0.5 cm thick, they crisp up well. 5 – 6 cm long.
- Whatever size you make, try to get them as evenly sized as possible so that they cook at the same time.
- Soak the sweet potatoes in cold water for an hour to remove the starch from the surface. Dry thoroughly on a towel or paper towel. Rinsing and drying will ensure a crispier roasting result. Put in a bag and add olive oil.
- Mix the spice mix in a cup and pour into the bag. Shake vigorously. Pour the sweet potato fritters onto a baking sheet as widely as possible.
- Bake the sweet potato fries in a 200°C oven for 30-40 minutes, until the fries are starting to colour well and the surface is crispy. Turn over halfway of baking. Be very careful as temperatures vary in different ovens, take care not to burn the fries.
- Meanwhile, crumble the blue cheese into the sour cream and swirl into a dip.
- Serve the Crispy Sweet Potato Fries with a dip immediately when they come from oven.
