Massaman curry is well suited to the European palate. It’s got plenty of potatoes in it! Grind the curry paste yourself or buy it ready-made from the shop.
Ingredients
- 400 g beef or pork sirloin
- 3 dl coconut milk
- 3 onions
- 3 potatoes
- 3 tbsp masaman curry paste
- 3 cloves garlic
- 2 tsp tamarind or lemon juice
- 2 tbsp cane sugar
- 1 tablespoon oil
- 3 dl water
- salt and pepper
Massaman curry paste
- 1 lemongrass
- 3 dried red chillies
- 2 shallots
- 2 teaspoons salt
- 1 tbsp coriander seeds
- 1 tablespoon jeera
- 5 cloves garlic
Instructions
- Cut the meat into thin strips. Peel the onions and cut into four pieces. Peel and dice the potatoes. Chop the garlic.
- Heat the wok. Pour oil and 1 dl coconut milk on the bottom. Let it boil for a while. Add the curry powder and stir until smooth.
- Quickly colour the meat. Add garlic slices, remaining spices, water and potato cubes. Cook until the water has almost evaporated and the potatoes are cooked. Add more water if its drying before potatoes are almost soft.
- Toss in the onions and the rest of the coconut milk. Bring the Massaman curry to a boil again and bring to simmer for 5 minutes.
