The legendary Godfather dish. The secret of the recipe is “osso buco”, or beef shank in English. Long braising with bones and bone marrow ensures an incredibly delicious taste experience. Needles to say this dish requires a beautiful Sicilian red wine in the glass.

Ingredients

  • 4 beef shanks
  • 2 tablespoons wheat flour
  • 1 large onion
  • 1 large carrot
  • 1 stalk celery
  • 1 bell pepper
  • 4 cloves garlic
  • 2 dl white wine
  • 4 tbsp white wine vinegar
  • 200 g canned tomatoes with juice Fresh tomatoes if in season
  • 1 teaspoon sugar
  • 1 teaspoon dried thyme
  • 1 dl olive oil
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • basil for garnish

Instructions

  • Check that there are no bone fragments in the meat. Roll the beef shanks carefully in flour.
  • Put a large frying pan on the fire and oil generously. Fry the meat until nicely browned. Set aside.
  • Toss the onion, carrot, celery, peppers and crushed garlic cloves in frying pan. Make sure there is enough of olive oil. Sauté the vegetables for a couple of minutes.
  • Pour the wine into the pan, bring to the boil and pour into the cooking pot. Allow the vegetables to soften for a while, simmering gently in the pot. Then pour the canned tomatoes into the pot. Season with sugar, vinegar, basil, thyme, salt and pepper.
  • Add the meat to the pot. Add enough water to cover all the ingredients.
  • Cover the pot with a lid. Simmer in a 125C oven until the meat is almost falling off the bone. In practice, this will take about three hours. Feel free to taste and season.
  • Place the osso buco in a serving dish, pile the sauce around it and top with basil.
