A sophisticated shrim appertizer, Toast Skagen will charm you immediately. An elite-level starter is also quick and easy to make. It also works very well as a picnic lunch, as long as you can keep the shrimp-mayonese mixture cold for a while. Of course, it’s best made with fresh shrims, but you can also get edible Skagen from frozen ones.
Ingredients
- 300 g shrimps
- 1 red onion
- 4 tsp whitefish roe
- 4 wheat toasts
- 1 tbsp butter
Mayonnaise sauce
- 2 dl mayonnaise
- 1 tsp lemon juice
- ½ tsp white pepper
- 1 tsp salt
- 1 bunch dill
Instructions
- Prepare the prawn or shrimps. Frozen shrimps can be rinsed in cold water and dried on kitchen paper. You can also use lemon juice to cook the prawns raw. It is important that the shrimps you use is well dried so that the skagen does not become watery.
- Put butter on pan and toast the breads nicely brownish.
- Peel and chop the onion as finely as you can. Finely chop the dill.
- Mix the sauce ingredients. Leave some dill for garnish.
- Stir the red onion slices (also leave some for garnish) and the shrimps into the sauce as well and turn over a couple of times.
- Cut the edges off the toasted bread and put one per plate. Top with shrimps and garnish with roe, onion and dill.
- Enjoy the Toast skagen immediately, so the bread doesn't become soggy.
