Huevos rancheros is an iconic Mexican breakfast that brings vibrant colours and a touch of heat to the breakfast plate. This dish usually consists of fried eggs laid on top of a corn tortilla and served with a spicy tomato and chilli sauce. And of course, being in Mexico, you can’t eat anything without jalapeño! Don’t be alarmed though – a little chilli gives the dish just the right zingy kick to gently awaken the senses.
Huevos rancheros – a Mexican breakfast classic with a healthy wake-up call
This easy and versatile dish is not only tasty, but also nutritious. It contains protein from eggs, fibre from bean filling and beneficial fats from avocado. Huevos rancheros is quick to prepare, while offering a real taste trip straight to the Mexican sun.
Huevos rancheros
Ingredients
- 4 tortillas
- 4 eggs
- 200 g tomato paste
- 150 g black beans in broth
- 2 fresh tomatoes
- 1 avocado
- 1 onion
- 2 cloves garlic
- 1 lime
- 100 g cooked ham smoked will do as well
- 2 slices cheddar
- fresh coriander
- 2 jalapenos
- ½ black pepper
- 2 tbsp olive oil
Instructions
- Preheat the oven to 175C. Drain the beans. Peel and chop the onions.
- Fry the onions and ham in an oiled pan. Add the beans and tomato paste. Season with pepper – salt is hardly needed as it is in the beans. Fry the bean mixture until the liquid is gone and the mixture is relatively firm. The bean mixture can be made the day before and stored in the fridge.
- Take four tortillas and spread the paprika mixture over them. Shread the cheddar over the filling as well. The filling should go as close to the edge as possible. Leave a well in the middle to break an egg into.
- Bake the Huevos Rancheros in the oven for fifteen minutes so that the eggs will cook on top of the tortillas.
- Remove to cool for a moment and squeeze lime juice over the top.
- Garnish the Huevos Rancheros with jalapeno slices, fresh tomato, sliced avocado and shredded coriander.
