Burritos are excellent fast food from Latin America. These burritos are quickly baked in the oven. This gives them a crispy surface and an oozing juicy cheese inside.
Ingredients
- 6 large tortillas
- 6 slices cheddar
Flour filling
- 400 g roast minced beef
- 1 dl pureed tomato
- 200 g kidney beans in a can of broth
- 1 large onion
- 1 teaspoon red jalapenos
- ½ tsp sugar
- 2 tbsp cooking oil
- 1 teaspoon salt
BBQ chicken filling
- 150 g chicken breast fillets
- 150 g chorizo sausage or salami
- 1 large red pepper
- 1 large onion
- 1,5 dl coca-cola
- 3 tbsp ketchup
- 1 tbsp apple cider vinegar
- 1 tablespoon cane sugar
- 1 tablespoon maize or other starch
- 2 tbsp oil
- 20 drops tabasco
Instructions
Flour filling
- Put the oil and chopped onion in a lukewarm pan. Turn up the heat and start sautéing the onion. Season with sugar.
- When the onion is hot, add the minced meat. Sauté for a while, the meat does not need to be cooked.
- Add the beans, half the stock and the pureed tomato. Season with pepper, jalapenos and bouillon cube. Cook the stuffing for 10 minutes until it comes together and the liquids disappear. Season to taste. Burrito filling should have plenty of flavor.
BBQ chicken filling
- Blend sauce ingredients until smooth and leave to season. Chop the chicken fillets, sausage, bell pepper and onion.
- Pour oil into a hot pan. Fry the surface of the chicken strips with the sausage. Add the onion – freeze for a minute. Toss in the paprika – freeze for another minute.
- Pour in the sauce, let it catch a little on the veggies and remove the stuffing from the plate.
Wrapping the burritos
- Soften the tortillas in the microwave for a minute. Pile up.
- Place 1/6th of the filling on the top end of the tortilla and a slice of cheese on top of the filling.
- Turn the edges of the tortilla inwards by an inch first. Then roll the burrito up to the other edge of the roll. Leave the seam of the burrito underneath. Place onto a baking sheet.
- Bake the burritos at 180C for about 15 minutes.
