- 6 plum tomatoes
- 1 handful mini olives or capers
- 1 tablespoon virgin olive oil
- 1 tbsp white balsamic vinegar
Peel and thinly slice the onion.
Cut the tomatoes in half.
Put the onions and tomatoes in a bowl, add the balsamic vinegar and toss.
Pile the tomato and onion salad into a serving dish. Garnish with olives and pour olive oil over the salad.
