Chorizo pasta with sweet peas

- 350 grams of pasta
- 300 grams chorizo sausage diced
- 1 small onion finely chopped
- 2 dl chicken or vegetable broth
- 200 g frozen peas
- 2 cloves garlic minced
- 1 tsp dried oregano
- 1 tsp of salt
- 0,5 tsp black pepper to taste
- 50 grams grated Parmesan cheese
- fresh oregano for garnish
- Olive oil for cooking
Cook the Pasta:
Bring a large pot of salted water to a boil.
Add the pasta and cook according to the package instructions until al dente.
Drain the pasta and set it aside.
In the meantime cook the Chorizo:
In a large skillet, heat a drizzle of olive oil over medium-high heat.
Add the chorizo sausage and cook until it's browned and slightly crispy, about 4-5 minutes. Remove chorizo from the pan and set it aside.
Sauté Onions and Garlic:
In the same pan, add the chopped onion and sauté for about 2-3 minutes until it becomes translucent.
Add the minced garlic and dried oregano, and cook for another 1-2 minutes until fragrant.
Add Peas and Broth:
Pour in the chicken or vegetable broth. Stir to combine.
Stir in the pan the frozen peas. Let the mixture simmer for about 5 minutes, allowing the sauce to thicken.
Combine Pasta and Chorizo:
Season and Finish:
Season the sauce with salt and black pepper to taste.
Place Chorizo Pasta dishes on plates.
Sprinkle grated Parmesan cheese over the top.
Garnish with chopped fresh oregano.
